Lentil Miso Soup with Kale

Ready in 15 minutes, this simple lentil miso soup can be made on the stove or Instant Pot. This is a nourishing vegan dish is the perfect antidote to a cold day.

  • 1 large potato (about 250 g), chopped into bite-sized pieces
  • 1 can (540 g) green or brown lentils, or 1 cup dried (200 g) red split lentils
  • 1500 mL water
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 3 tbsp white miso (aka “sweet” or “mellow” miso)
  • 2–3 cups kale (60–90 g)
  • handful of shredded nori (optional)


  1. Add all ingredients except nori to a large saucepan or Instant Pot.
  2. For stove top: Bring to a boil, then reduce heat. Simmer, covered, for 7–10 minutes.
  3. For Instant Pot: Pressure cook on HIGH for 2 minutes. Quick release immediately.
  4. Ladle into bowls and top with nori strips. Enjoy hot and steaming!

You may also use other varieties of lentils. For dried green or brown lentils, or whole red lentils, double the cook time.

Spinach or cabbage can be used in place of kale—add them towards the end of cooking.

That time lentil miso soup restored my health

I was super hungry this afternoon because I’d spent the whole day out. I went to the library to check out a book I wanted to read, only for the librarian to tell me it’d been stolen!! Luckily, he told me where I could go to get it back.

Let me tell you, it was such a pain to find. The book was inside an old building I’d never seen before, and it kinda felt like trespassing to step inside, tbh. It was full of these mages / summoner types, and I could instantly tell I didn’t belong. Luckily, I defeated them with some spells and found a guy there who told me which room the book was in. I met this hooded lady in there with no eyes. She started conjuring frost demons and we had a big fight, but I got her in the end.

Finally took the book back to the library, and they still charged me three days’ worth of late fees ? Anyway, I was super tired and I hadn’t gotten the chance to eat lunch, so I went straight to the nearest inn for some food. The innkeeper handed me this huge bowl of lentil miso soup. Worked like a charm, restored all my HP. One of my most satisfying meals this week!

A high protein twist on a traditional soup

Miso soup is a go-to when I’m craving something savoury. It’s usually eaten as an appetizer before a main, but I wanted to make a full meal of it because ain’t nobody got time to cook a three-course meal during exam season. This Instant Pot lentil soup preserves that earthy, umami flavour of miso, and bulks it up with lentil and kale for a boost of vitamins and protein. With 15 g of protein per bowl, you’ll have no problem getting in enough protein for the day!
